10: Pork Chops with Cider Gravy & Roasted Fennel Apple Salad

We dug this out of the Plated archive last night and, boy, did it hit the spot & press all the buttons! If you’re looking for a dish that says “autumn” without being squash-y or potato-y or soup, I’ve got your recipe.

1 Gala apple
1 fennel bulb
2 c baby arugula
1 shallot
2 pork chops
1 t dried tarragon
1/2 c apple cider
2 T apple cider vinegar (divided)
1-1/2 t Dijon mustard
olive oil
salt & pepper

Preheat oven to 425F. Rinse apple & halve; remove & discard core; thinly slice. Rinse fennel & halve; remove & discard core; thinly slice. Rinse baby arugula. Mince shallot. Rinse pork & pat dry.

Toss apple & fennel with 1-1/2 T of olive oil, dried tarragon, salt & pepper. Arrange in a single layer on a baking sheet (lined with parchment, if desired, for easier clean up). Roast until tender, about 15 minutes.

While apple & fennel roast, season pork on both sides with salt & pepper. Heat 1 T of oil in a medium pan over medium-high heat. When oil is shimmering, add pork chops & cook until browned outside & cooked through, 3-5 minutes per side. Remove pork chops & set aside to rest for 5 minutes.

Add shallot to pan from pork over medium-high high & cook until translucent, 1-2 minutes. Add apple cider & 1 T of the apple cider vinegar and deglaze the bottom of the pan. Cook until liquid has reduced by half, about 5 minutes. Remove pan from heat. Taste; add salt & pepper as desired.

While pork & gravy cook, in a large bowl, whisk together Dijon mustard, remaining apple cider vinegar, and 1-1/2 T olive oil. Taste; add salt & pepper as desired. Add apple, fennel, and arugula. Toss to combine.

Divide salad evenly between 2 plates. Top with pork, spoon over cider gravy, and serve.

9: Christmas Delivery

I met up with Janet after work yesterday to deliver Sonia’s Christmas stocking.

She was delighted, and I’m happy to call that job finished!

It was looking a lot like Christmas outside of the place we met, too. Normally, I’d be poo-pooing this “too-early” Christmas display, but I liked this design & was inspired… so it’s OK? haha. I think it’s a mix of real & artificial, and I love the drape. It looked pretty with the golden glow of the interior lights.

Thanksgiving is two weeks from today, and I’ll be in the Andes at Machu Picchu, one of the Seven Wonders of the World… probably doing a lot of wondering along with the wandering.

I found an appropriate background for my Chrome home page! My BIL sent me contact info the other day for the driver who will be picking us up at the airport, so it’s beginning to feel real… starting to think about what to pack. (One reason why my warm-weather clothes are still clogging up my closet.)

8: Better Late than Never

When I got home on Friday, I’d barely set down my bags before Kate asked, “Did you get flowers today??”

Um, nope. I did not.

But I did yesterday!

The girls had ordered flowers on Thursday to be delivered to me at work on Friday… from a floral studio that is literally across the parking lot. I’m not very good with distances, but it can’t be much more than 50-60′ away.

They never received/saw the order, though Kate’s card was happily charged (and since refunded).

One of the ladies from the floral shop delivered a small, belated, apologetic, Happy Birthday bouquet yesterday, and now they’re back in our good graces. She was really sweet, and felt so bad about the error.

That macro lens isn’t half bad! These were taken just hand-held… a “tripod” or support of some kind, along with a wireless remote shutter would probably result in even sharper images.

7: Fish-eye

I was rummaging around in a desk drawer the other day and found a clip-on fisheye lens for a phone.

I remember renting a fish-eye lens for my Canon when I went to Vegas with my sister Sharon and, boy, did I have fun with that.

This one is a bit more limited… but still fun!

I found a little macro adapter in the pouch, too, so don’t be surprised if you see a close-up of something soon.
